Mount Phoenix in southern China is known for its high fragrance single bush oolongs, also known as dancong. What sets dancong apart is the fact that there are over 70 varietals that fall into 12 different fragrance categories, each with their own unique aroma and flavor profile.
Mount Phoenix is also located close to the birthplace of gongfucha - a traditional brewing method using one gaiwan and three teacups, regardless of the number of guests.
Duck Shit oolong, also known as silver flower (银花香), is made from spring harvested maocha picked from 600 meters altitude. It has undergone a light oxidation process, resulting in a tea that is reminiscent of green tea with lower astringency and higher fragrance.
When brewed, the Duck Shit has a light copper color and a strong floral aroma. The flavor is interesting with a quick fading astringency, leaving a ripe pear taste on the cheeks and at the back of the throat. For a comparable taste test, we recommend trying our Honey Orchid, which comes from the same region but has a heavier oxidation process.
To experience the full flavor profile of these teas, we recommend using a small pot or gaiwan with 100 °C water and 30-second steeping, for 4 plus infusions.
